Since January 2006 it has been a legal requirement for food business operators to have a documented food safety management system and associated monitoring records that are relevant to their food business. If food businesses are operating without a food safety management system they are breaching this requirement and, on inspection by the Environmental Health Unit, formal action may be taken. Safer Food Better Business (SFBB) is a food management system designed by the Food Standards Agency, for use in catering establishments. It has been designed to assist food businesses in complying with the legislation.
The Tees Valley Food Hygiene Award is now in operation and all food businesses in Stockton-on-Tees are now allocated a star rating. The star rating is a way in which customers can easily establish how well a food premise is managing food safety within their business. Complying with the legislation may improve star rating of a food business.
Businesses with a documented food safety management system (e.g. SFBB or Hazard Analysis Critical Control Point (HACCP)) will score more highly than those that don't.
Safer Food Better Business is based on the four C's linked to food safety:
- CROSS CONTAMINATION
- CLEANING
- CHILLING
- COOKING
MANAGEMENT
The SFBB pack also consists of a management section and a week to view diary to record issues or problems and action taken when things fo wrong.
Workshop Dates 2008/2009
New dates have been planned for 2008/2009 for Food Business Operators (FBO) to attend a half day SFBB workshop. The cost of attending one of the SFBB workshops is £75 per person. The fee includes an in premise visit to assist FBO's in implementing the food safety management system.
